About Our Bread
The Process

All of our bread doughs begin the night before with a polish or starter.  The  doughs are mixed in the morning and given a long slow rise before being formed and given a last proof before bake-off.  We do not use any dough-violent baking equipment. like huge horizontal mixers, dough extruders, or tunnel ovens.  Slow rising is important because it develops flavor and makes a stronger dough.

The Baking Crew
Our baking crew is led by Joaquin Gayosso-Castillo.  He grew up in his father's bakery in Mexico, so he's been around the baking process his whole life.  He's been with us about five years and his craft keeps getting better and better.  

The Ingredients
All flours used in our bread and pastries is  milled locally at Lindley Mills, Saxapahaw, NC.  Along with mostly organic flours, we use charcoal filtered water.   We also use honey and molasses as sweeteners, fresh yeast, corn oil, fresh eggs, fresh potatoes, sea salt, rolled oats and other natural ingredients typically not found in larger wholesale bakeries.  we do not use preservatives, conditioners, and other questionable chemicals which are needed for a longer shelf-life but which detract from the taste and wholesomeness of the product.
